I am a German mother tongue speaker and had German classes up to my high school graduation. I have a good command of German due to extensive reading but never taught the language.
I once gave lessons in a university class I had passed the year before. Being quite successful in it (all my students passsed) and having fun doing it I did it again the following year

That largely depends on the students. Before the first lesson I will make a goal with the student what he wnats to achieven and then arrange my lessons around that goal: I offer classes mainly focused on speaking and communcation and accents but of course, we can also go through the standard textbook with homework. Ideally, I would recommend a combination of both with a larger focus on the grammar and background.
